Get thee to the works of Shinichiro Watanabe. His "Cowboy Bebop" and "Samurai Champloo" are classics - you *must* check them out.

If you want to become an anime "connoisseur," I recommend you watch Neon Genesis Evangelion (it hurts the brain), Trigun, Cowboy Bebop, Samurai Champloo, Ruroni Kenshin (or Samurai X), Akira, Hellsing, Vampire Hunter D, The Melancholy of Haruhi Suzumiya, Inuyasha, Full Metal Alchemist, Samurai 7, DN Angel, etc.....
(Thats just a few on my anime list, lol.)

FYI spelling is most likely off in some of these names Note the list will be edited as I recall some Animes I've watched
Great Princess Monoke (butchering the spelling) Cowboy Bebop FLCL Samurai Champloo Neon Genesis Evagelion (gets crazy in the end FYI) Crest of the Stars / Banner of the Stars Elfen Lied (extremely bloody FYI) Full Metal Alchemist
Good Rurouni Kenshin Dessert Punk Robotech Trigun Slayers, Slayers Next, Slayers Try (don't watch the dub it will burn your ears off) Techni Muyo (the first one not the Universe / Tokyo crud) Dual! Parallel Trouble Adventure
OK Mai Hime Love Hina Gundam Wing, Seed, etc Lost Universe (again don't watch the dub) Case Close Mahaburo Big O El Hazard
Haven't watched but heard it was good Blood + Eureka Seven Hellsing Ouran Club Escafloune Wolf's Rain Ranma 1/2 (I think it was made by the same person who made Inuyasha)
If you still want to look for more I suggest going to veoh.com and browsing throught the animation section

I really like Ouran High School Host Club, it's a bit strange, but good, and very funny once you get into it. ^^

Most of the suggestions are spot on. It really depends on what your club whats to watch in 1 sitting. IE are they looking for a movie, OVA, series?
as far as manga is concerned, I've heard that Claymore (still on going) is pretty good, in the same vein as Berserk.

My friend really likes DN Angel and I want to check it out really soon.

Most of the best animes have already been listed but a few that I will bring up again for emphasis and because they are truly are that good are Samurai Champloo, Cowboy Bebop and Blood +. Eureka 7 is pretty good as well but it gets a bit to much "I can't live without u" feeling too much between the two main characters. I am a bit surprised you did not already have FMA on your list but that anime is a classic. In addition, all of these anime have already been completely dubbed so there is room for comparisons between the sub and the dub.
So my list goes:
Samurai Champloo Cowboy Bebop Blood + Eureka 7 Fullmetal Alchemist (FMA) FLCL (makes no sense most of the time but is actually good)

I want to caveat on any recommendation on Evangelion.
1st) I do agree you have to watch it to form your own opinion 2nd) It's a very polarizing anime, people tend to either love it or hate.

after seeing all the recommendations it makes me realize i've watch a LOT of anime >_<

Great Princess Mononoke Cowboy Bebop FLCL Samurai Champloo Neon Genesis Evagelion (gets crazy in the end FYI) Crest of the Stars / Banner of the Stars Elfen Lied (extremely bloody FYI) Full Metal Alchemist I haven't seen Crest of Stars but I might check it out now because the rest of that list bleeds with truth.

Crest of the Stars is great just some people who expect anime along the lines of a fast paced action story with a hero who wields a sword which is phyiscally too big for him to lift will be disappointed. It's kind of like a slow boil Star Trekish space drama.

*flies in and tackle Tung* I LOVE Crest of the Stars. I'm sitting down staring at the box set right now xD Its a bit slow, but its all about the characters and the plot, not so much action as you might expect, and IMO banner of the stars isn't nearly as good, but I never really gave it a chance so >> Seeing as how anime has been pretty much run to the bone I'm just gonna add a few more, Outlaw Star. Its simply godly, nuff said You'll be safe with anything Miyazaki and if you're looking for something different try Eden's Bowy. Its pretty darn good and its where I got my username from ;D If you're going for just pure comedy you can't go wrong with Narama Daikon Brothers. Like FLCL its pretty random, but its nonstop laughs. You also might want to look into King of Bandits: Jing. Its a comedy actiony adverntury thing that has the greatest start to an anime ever IMO. Manga side I could rant to you forever about xD As someone said, Claymore is smex in book form. Its easy to read, gives a good amount of action and character development and has a complex enough world and story that you won't get bored anytime soon. I see that you've read Slam Dunk, and while I enjoyed the series, there are some other sports mangas out there that are really good, the first that comes to mind is H2 by Adachi Mitsuru. The manga that he wrote is almost all from like the 80's and everything that he writes is pure gold. I have to say if you're a baseball fan you have to read at least something by Adachi. They are all great, H2 and Touch are just the most popular. If you're into boxing the best boxing manga I've ever seen is Hajime no Ippo hands down, but that is like 800 chapters. If we head away from the sports we find of course One Piece though if you watch the dub be ready for some intersting VAing, I suggest manga, but I always suggest manga >> You can't really go wrong with 666 Satan nor with Ares. Black Cat is also very compelling along with Bremen and both around around 100 chapters if memory serves. *headdesk* I almost forgot Eyeshield 21 which is the only manga any of my non-anime liking friends have ever read on their own. I can't forget Fairy Tail either, and thats where I'm gonna stop. As I said, I could go on about manga forever, I've read way more than I would like to admit to. Pretty much anything you find on this site is worth at least a glance at...except the shojo...so. much. bad. shojo ><

FLCL is another one. It will make no sense the first time you watch it though, lol! It's only six episodes long, too. The creators of Avatar love FLCL, so it has to be good, right? I never understood it, but since it was only six episodes long, I never tried to understand it after the first two times watching it. I'm surprised no one has mentioned Flame of Recca. I suppose they never dubbed that series for America. Slayers is also a fantastic show. Ronin Warriors is decent. (You can tell I grew up in the 90's )
