You should try to watch something besides the cutesy cutesy anime. This may be my own personal preference, but the more serious series leave you with a more satisfying feeling at the end.

Rurouni Kenshin and Fushigi Yuugi period.
Ok, any historical manga like Samurai Champloo, Peacemaker kurogasa, and Kaze Hikaru will do. That, and you need your funny $#!% like Gintama, Trigun and Full Metal Panic? Fumoffu! and such. Some of my favorite shojo titles are Fushigi Yuugi, Ayashi no Ceres, Kaze Hikaru, Tail of the Moon, and some other stuff.
For drama, read Confidential Confession. Fantasy, Record of Lodoss War. Don't forget the Korean stuff. I.N.V.U. is good.
That's all I can think of.
I'm pretty sick of the anime presented to us by Adult Swim, or, at least, the over-rated stuff.
So yeah.

I don't really have any new things to suggest, but I'll just reinforce a couple that have been mentioned already.
Princess Mononoke, another Miyazaki masterpiece, and my favorite of them all. Samurai Champloo and Cowboy Bebop by Shinichiro Watanabe. Code Geass, Outlaw Star, Trigun, and Fullmetal Alchemist round out the list.

By the way, the problem with some of that anime isn't that it's not serious enough, it's that it sucks.

I was just about to suggest 'Ghost in the Shell' myself!
You might also enjoy 'Paprika', which came out a couple of years ago, and since you've got quite a few Studio Ghibli movies listed, why not check out 'Kiki's Delivery Service'? It's quite a sweet coming-of-age story about a young witch who has to make her way in the world.
'Steamboy' is a rather splendid steampunk adventure, which I'd definitely recommend too. Hmm.
Bookwise, I've not found anything I love more than 'Deathnote', but I have a soft spot for 'Pet Shop of Horrors' - lovely artwork, and Count D is made of win. (And has a wardrobe to DIE for.)

Manga's: Monster (absolutely the most impresive manga i've read so far) 20th century boys Rurouni kenshin (don't watch the anime, the first ova is very good but the rest is decent at best. The anime lacks the story line from the manga)
Full lengt movies: Ghost in the shell Ghost in the shell 2: Innocence Akira Paprika Ninja scroll Porco Rosso (really one of miyazaki's best!!!) Kiki's delivery service Princess Mononoke Laputa; Castle in the sky
Anime series: Trigun pretty much the only anime series i've seen that is worth to recomand to someone. I've heard that Ghost in the shell: stand alone complex is a very good series to but i haven't seen it my self yet.
