LotR has some of the most powerful music in it. I love that soundtrack. I recently got the soundtrack from Life as a House. Mark Isham was the composer and it's really great. I love most of John Williams's stuff too. He did Star Wars and Memoirs of a Geish; my favorite ones by him.

Movie soundtracks are awesome--dramatic instrumental music creates excitement out of any dull activity. =D
I really enjoy Danny Elfman's scores, such as those for: Spiderman, CotCF, Nightmare Before Christmas, and Edward Scissorhands. Yay! John Williams is up there too, naturally.
The soundtracks for Gladiator and PotC are also worth mentioning.

I just saw PotC At World's End and I really liked the music. I think I might have to buy the soundtrack. It seemed different than the first two.
