In the first two episodes, Iroh certainly came off as the sagely character in the series--in other words, he was a stock character. Thankfully, the creators expanded his character, acting as both a silent comic relief (never mind his remarks--have you ever just watched Iroh's expressions? Hilarious!) and as a man fully aware of his powerlessness to help his nephew.
Iroh, though commanding some respect and authority (I loved it when he put the 'smack-down' on Zhao in The Southern Air Temple), obviously cannot do anything to alter his nephew's position. I'm fairly sure that no plea, however heartfelt, would have penetrated the twisted mind of Ozai. I believe that Iroh, most likely having tried that avenue and failed, did the next best thing: give his nephew the best possible chance at catching the Avatar. The only way to do that was to send one of the most accomplished Firebenders with the Prince; naturally, it would have to be Iroh.
Has anyone stopped to imagine how endlessly frustrating those first two years at sea must have been? First off, the Avatar's trail was cold, by about 100 years. Talk about fruitless searching! We already know that Zuko tends to be more temperamental, and coupled with those moody teenage years, the Prince was probably the most trying part of the whole mission. Also, in the first episode, The Boy in the Iceberg, Iroh commented on how Zuko needed to master the basics of Firebending before he progressed.
Wait a minute. This is the Prince of the Fire Nation---a Firebender Prince. Surely by the time he's 16, he would've figured out the basics! After all, he willingly engaged in a Agni Kai duel at age 14 against one of the Fire Nation generals--he must have known some Firebending. I can guarantee you that Ozai would've provided the young Prince with instructors to ensure his son was a top Firebender. Might makes right in the Fire Nation; the better the Firebender, the better the leader.
Iroh must have spent the last two years completely re-training the Prince. As exhibited in the first episode, Zuko uses only the force and power of Firebending, rather than the method Iroh described to him. Perhaps it is the vestiges of his previous training, where the force of your punch was emphasized more than the technique behind it. It's sloppy but effective. Iroh demands a higher discipline from Zuko. It'll take longer but will serve you better.
Aside from the Firebending, Iroh has also been guiding Zuko along the path of serenity and level-headedness. The path sure has been rocky and I'm sure Iroh had to drag Zuko, kicking and screaming at points. Zuko still hasn't gotten quite a handle on his temper. He has the same reactionary personality as his father--though not to that severe degree (yet). If Zuko is to survive, he must learn to channel his aggression and temper, focusing it without allowing it to cloud his vision. Iroh knows this and is desperately trying to get the Prince to realize it as well. The only problem is that time is vastly against him.
Iroh has exhibited both patience and sagely wisdom in teaching Zuko. Iroh knows that the best hope for his nation lies with the Prince. The only way to keep the Fire Nation off of the destructive course that it's on is to eradicate Zuko's previous instruction and replace it with moderation, temperance, and wisdom.
Iroh has his hands full.

what do you do in your free time? seriously! Impextoo! I have a theory for Iroh and Ozai but I just have to wait before I can be sure that it is possible! I loved it when Iroh said "Noodles" it cracks me up every time!

Uncle Iroh = the COOLEST animated character ever created in the history of animated characters, and him and Prince Zuko work together so well to create the PERFECT balance in character relationship. (Gotta love the Zuko/Iroh moments! They're the best!).
I love how Iroh sticks with and takes care of his nephew, even when his uncle is in exile. We see that he has a strong love and respect for his nephew, and, judging from the episode "The Storm," always had, and I believe that Prince Zuko feels the same way towards his uncle.
Iroh is full of wisdom, he can be very serious, and he can be very funny. I just wish that they'd bring back his tea! He hasn't had any for a while (that we've seen). lol.

What's so funny about Noodles? Did it scare anyone when Uncle Iroh ate Roasted Duck? That was just..wrong..also they eat fish alot on that ship..fish is evil when will the world realize it? Specially Japan and China...

Oh, fish tastes like rubber bands. I can't remeber what Roasted Duck tastes like..but i know it dosen't taste good. My mom like's duck..ew

Salmon is great! and type of fish is great it is like the only closely thing that i eat besides cow and i eat very little cow......I hate pork! that is gross but I never tried duck and probably never will also! Iroh I do not trust him!he is cool and all but he acts to suspicious!
