Canon is what happens in what you're intrested in. Like a book, movie, or TV show.
Kataang is already canon. Its happened on the show. And I have no idea why there is still a Zutara ship anymore.

When/if something concretely Mai/Zuko happens in canon fandom will explode.
The majority of fandom (i.e. Zuko/Katara shippers) has been practicing rationalizing away Aang/Katara for over a year now, so canon being constantly inundated in Aang/Katara doesn't phase them. The Aang Issue has always been there and many Zuko/Katara shippers have convinced themselves that he's not, in fact, an issue.
However, Zuko having never shown the slightest romantic interest in anyone in canon is hugely important to the psychology of the Zuko/Katara ship. As long as he's never interested in anyone, they can believe that it's because he's being saved for an eventual pairing with Katara, that she will be his one and only. As soon as he shows interest in Mai that goes entirely out of the window. Then, Mai/Zuko and Aang/Katara serve to reinforce each other since when only one person is, arguably, paired in the canon, it's much easier to pretend that that's not going to mean anything in the long run. When both parties are in other pairings in the canon the obstacles have clearly doubled. From the perspective of Zuko/Katara as a viable ship, it's easier to believe that Mai/Zuko will be lasting while there's Aang/Katara to keep Katara occupied, and, alternately, it's easier to believe that Aang/Katara will be lasting while there's Mai/Zuko to keep Zuko occupied.
So, after this huge blow, there would be wailing and gnashing of teeth and OMG THE SHOW SUCKS NOW. Followed by attempts to rationalize away Mai/Zuko as say, the precursor to a Mai/Zuko/Katara triangle (in which Katara would be the victor, clearly) or a relationship to help Zuko grow so that he can be ready for Katara. Hope would remain for these people, but somewhat battered. Some people would sink into hardcore denial and start picking apart whatever the damning scenes were and pretending that there was somehow something ambiguous about them and, thus, OMG IT IS NOT AS CANON AS YOU THINK. Some of the previous teeth-gnashers would glom onto this perspective and become even more hardcore in their shipping and in their belief that it will be canon. This contingent would start writing lots and lots of fic killing off and bashing Mai and an endless variety of How Mai and Zuko Break Up and/or Katara Saves Him from Her Evil fics. Other teeth-gnashing foul-criers would quit the show or, at least, talk a lot about how they were going to quit the show, but hang around to whine. Some shippers would try to take the "high road" by pretending that they were not bothered, but many would, in the following weeks start miraculously finding so many non-ship things wrong with the show and quit more gracefully than the hissyfit-throwers. A few, very few, would convert.
Aang/Katara shippers would rejoice that Zuko was finally "out of the way" and believe that they could now enjoy their ship in relative peace. They would be wrong since, as noted above, many people would not stop canon!shipping Zuko/Katara, and would, in fact, become even more fanatical about it.
Mai/Zuko shippers would be delirious with glee and newly the most hated people in the fandom for perceived gloating and face-rubbing. It would not actually matter whether they were, in fact, doing these things.
Song/Zuko shippers would be disappointed, but already prepared for this outcome.
A scant few Zuko-slashers would be irritated that Zuko was canonically straight and now they had to write around a girl in his life, but most of them would soon get over it.
I would have pie.

So, here's the new council *tea with cookies mmmmm...*...lovely, I should come here more often.
To resume: when Maiko will come canon, cause I don't doubt it will, people would hate us but we won't give a clue about them cause we'll congratulate ourselves and plan the wedding (will Mai need to have a new haircut to fit with the crown? Deep red/golden or black/red for the dresses ? What would be the name of their children ?).
