i could never tell what was there ethnicity was..... is Katara and Sokka like mexican or something around there?

Based on what they look like and where they live, I believe their ethnicity is Inuit-influenced. Obviously it can't actually be Inuit because this is a fictional universe.

I agree with Diamond from the way they live and apperance I would say they're ethnicity is based on the Inuits. The fire nation is obviously on my side of the racial scale So pale and never get tan even though they're "in sync" with the sun and they live in a very hot place. *grumbles because she can't tan*

Races and ethnicities don't exist in the Avatar universe as they do in our world.
There are only four ethnicities in Avatar. Air, Water, Fire, or Earth.
However, the appearance and customs of these tribes may be based on and resemble groups of people from our world.
The Water Tribe seems very Inuit (Eskimo), only with blue eyes.
The Fire Nation seems to be very similar to Chinese, but with yellow eyes.
The Air Nomads seem to be based on Buddhism, so I'd say Japanese? Tibetian?
And the Earth Kingdom seems the most varied, which makes sense since it covers the largest geographical area. They seem to be a combination of many different Asian cultures; Chinese, Japanese, Korean, Indian, in some cases even Middle Eastern.
EDIT: Oh, and just so you know, "Mexican" isn't an ethnicity. Just like being an "American" is not an ethnicity.
Now personally, I don't really have a problem with it, it was an honest mistake. I'm just telling you because some people can be REALLY quick to be offended and accuse others of being racist.
Ah well, now you know, crisis averted, no one is offended!

Avatar's people are based on various cultures:
The water tribe people are based upon Inuit people
The earth kingdom is mostly based on traditional Chinese, but with lots of mixes thrown in (Song wears a Korean outfit, etc.)
The fire nation is based upon mixed cultures of Japan and China.
The air nomads are, I think, based on Buddhist Tibetans and other similar cultures. It also has a Daoist feel to it, being in harmony with nature, etc.

If Nickolodeon took Sokka and Katara, tossed real clothes on them and put them on earth, I'd go with the assumption that they were Philipino.

An ethnic group is a human population whose members identify with each other, usually on the basis of a presumed common genealogy or ancestry (Smith, 1986) - from wikipedia
note that Race is just what color is your skin (e.i. I'm white) but don't get that confuse with ethnicity which is bascily where you come from (e.i. I'm Hispanic -Mexican)

Theres really only one race...the human race. I say Katara and Sokka would be Pacific islanders, mostly from Guam with a bit of European in them...but thats just what I like to think.
