It would be pretty difficult to do. Each season is, in all, ten hours long, so condensing that into a 2-3 hour movie would be difficult. Because of the fact that the show would be aimed at younger people (it will be rated PG, no doubt about it), I can't see them making a really long one like Lord of the Rings. Probably about 130-150 minutes long (about as long as the last three Harry Potter movies have been).
For the first movie, which will encompass the events of book one, I see many of the episodes being cut out. Lots of them can be considered filler in the grand scheme of things. Also, characters like Bumi will be cut out. Jet might have to be cut from the first movie, but he most likely will appear in the second because of his importance, and they will just have to leave out his connection with the gaang, and he will just serve as a character in Zuko's story. Whether people like Suki or Haru will be cut out remains to be seen. It depends on how big of an importance they have in the rest of the series.
Here are the episodes I see as for sure being included:
The Boy in the Iceberg/The Avatar returns They might cut some of the exposition out, but these will most likely appear, kicking off the story. I say most likely because they may cut these out and kick off the movie with them already on the adventure, with a kind of narration describing briefly what is going on (kind of like the openers to each episode). But that is very unlikely.
The Spirit World/Avatar Roku These are needed episodes, because they explain Aang's journey. While it is possible that they are cut out and they just explain these details briefly in the beginning, it is 98% likely that they will remain.
The Waterbending Master/Siege of the North No director would dare leave this out, I mean, this is the ending of the book, and thus the ending of the film. Although they may change around somethings, to make it more cinematic and also just so it is a bit independent of the show, I could see them keeping this almost exactly the same. I could see them focusing the entire last half of the movie around this, and using this setting to illustrate a few important scenes from a few episodes. This would make it more linear (season one was extremely nonlinear) and that could help make the story more palatable in movie form, and better for common theater goers.
Also, here are some episodes that may appear, though not entirely needed, and if they did appear they would probably be integrated into other parts for time.
The Storm The details behind Zuko and Aang will of course be delved into. Though it may not happen in this same manner, it will happen. They may choose to do it all at once, or they might reveal bits and pieces of it progressively throughout the movie.
The Southern/Northern Air Temple Not completely necessary, but they could spend about 5 minutes in these spots, allowing them to give a little bit (or maybe a lot if they wished) of detail about Aang and the Air benders. Anyways, where else are they going to get Momo?
The Blue Spirit This does a lot of development for Zuko. It may just be wishful thinking, as this is one of my favorite episodes, but I could see it being included. But it is not really all that needed, and if the Blue Spirit even does appear in this book, it probably won't follow the same overall story as this episode.
Jet Jet has significant importance in book two, and although they could wait and just introduce him then, if they did that, they would miss out on the emotion that goes on between Jet and Katara.
The Waterbending Scroll It feels as if this episode was made to be used in the movie. Really not needed, but they could easily be adapted to the movie, and easily use it to take up some space in transitioning from one place to the other, and if they wanted to use the pirates, they should be introduced here.

The Drill. It was funny watching Azula get pwned XD Ahh, but I love her, so I picked that eppy. But I guess siege on the North'll do since the movie's based on S1 >_>

I dunno. I don't think they can just use two episodes for the movie. It seems more like they'll make the movie from a collaboration of many episodes to me...

For both movies, I'd pick the endings. CoD and SotN are such awesome episodes (though I voted CoD)
