Yeah I also believe that a new storyline would be the best route to go here. Specifically a series focusing around the events leading up to the Fire Nation taking down the Air Bender Nomads.

The series ended with a major cliffhanger, and I think the best way to keep a familiar character AND create a new story, is to send Zuko off on a search to find his long lost mother, maybe in an unexplored area of the world, or another world entirely.
